Hellmuth specializes in tourneys, he's gonna want to be in the big WPT, the world series, so he probably doesn't have a lot of time for cash games. He can hold his own in cash games; on High stkes poker he did OK, but I think yourneys is where he prefers the action.

hellmuths game is more suited for tournaments really anyways, so it shouldnt be a surprise that hes better at them then cash games. would ray allen be better in a slam dunk contest then a 3 pt contest?
