dim sum rocks, if you get a chance to experience it, you will understand... you will probably have to step out of your comfort zone to function with numerous carts circling your table...
Dim sum is fast, intimidating and delicious
if you are eating oily meat and/or vegis fried in a wok and calling it chinese food, it would be like eating only burgers and calling only burgers american food...
there is alot more to chinese food then panda express/pf changs...

Sang Choy Bow
Peking Duck
Drunken Prawns. The prawns/shrimp are brought to your table while alive and are placed in a broth made up of mixture of Chinese sauces, spices and alcohol. The prawns are boiled in the broth and after you have eaten the prawns, you then drink the broth. It's fantastic.

Dim sum is fast, intimidating and delicious -- I agree dim sum is awesome. And I also agree that what we are exposed to as Chinese food is a far cry from what the Chinese would call Chinese food.
But in the nature of the spirit of the question I will have to say that spicy beef lo mein is the only way I go.
IMO -- chinese is an inferior foor compared to the other oriental countries. Thai, korean, Japenese etc. are all much better.
