I know it may sound like a stupid question but they easily trump any other European and Asian leagues in terms of total points scored. The thing is, being high scoring is pretty much league-wide whereas in other leagues you only see a team or 2 way ahead of the pack. I understand the pace is really fast, but why can't other leagues with better players and shooters score as much as these Aussie teams? Is it just a lack of defense? Are the rims "bouncier" compared to other leagues? I'd like to hear your insights.

There's a few reasons but a big factor is the reduction of the shot clock from 30 to 24 seconds. This obviously means more shots go up in every game.
It is just the same as other leagues in Europe and Asia. The shotclock doesn't even seem to be a factor in this league because they see shoot within the first 10 seconds almost all the time.

Softer rims, smaller 3 point line. Its not as far back as the NBA. Not sure about Asia or Euro Leagues but the 3 point line is shorter. Also, these teams are hitting around 47% league average as well so that might be higher than Asia and Euro. After watching some Euro league games, they tend to use almost every second of the shot clock. In Oz, they just run up and down the court and very few teams actually use the 20 seconds. Most teams like you said use around 10-15. Apart from NZ, these guys nail their free throws as well. Most teams are hitting above 80% for the year. Less time-outs during the game keeps the flow moving as well.

I'd like to think the softer rims are the biggest factor which makes it easier to shoot jumpers/3pointers. Heck, these Aussie players look like the Splash Brothers with these rims.

gotta love these types who come in and make broad statements about the league per se after half a season of X or Y being a popular trend.
Where were you two, three, four years ago when the ave ppg in this league was less than 160 and totals in the 140s were commonplace for a number of match-ups.
This season is very much an outlier in terms of the average points per game being scored. A season ago (or maybe two?) there was a change in interpretation of how much contact / holding was allowable for defenders. It led to a spike in scoring early in that season but things seemed to level out as the season went on.
As for this season, who knows. Ave FG percentages still seem to be around the usual 42-43 across most teams, so it's likely a case of more shots going up per game. One thing seems certain to me and that is the application to defence has diminished with a few teams.
But only a couple of years ago there were loud cries for a return to 48 min games to avoid the ugliness / embarrassment of so many scorelines in the 60s & 70s
