No-KYC casinos are a mixed bag. Some run fine for smaller amounts but the moment you try to withdraw anything significant they'll ask for docs anyway — so the "no ID" thing is mostly a signup hook.
The real question is licensing. A lot of these sites either have a thin Curaçao sublicense or nothing meaningful at all. Sites operating under a serious offshore gaming license provider actually have player protection obligations they need to meet — no-KYC operations often skip that entirely.
Payouts can work fine below certain thresholds but I wouldn't trust them with anything serious.
