A salad is not supposed to be a casserole. It's a salad.
Why do you think salad bars have like 50 ingredients? It's a salad. You're supposed to put a bunch of shit in there.

On the olive front those jarred sliced green and black olives are an inferior product compared to Kalamatas. This is not even debatable. Stuffed green olives (jalapenos, blue cheese etc...) are also good.
Everything else is up to you.

Bibb lettuce is top of the ladder but don't throw rocks at iceberg. IF YOU PUT SLICED GREEN SALAD OLIVES on your salad and make a real vinagrette...... The iceberg has a firmer texture and can hold up to the acidity without wilting.

going to have to agree with the shrimpster here
everything has it's purpose
you can't really make a grilled ceasar salad with arugala or spinach,,,,,you have to be able to put half an intact head of romaine on the grille
and he's right about iceberg, sometimes you need something that holds firm with some crunch to it. And then you have some lettuce for your BLT as well
bibb
romaine
iceberg
baby spinach
spinach
arugula
all have a role in the salad world

Sure you can make a grilled ceasar salad with arugula and spinach (especially spinach). And you can also put arugula and spinach on sandwiches as well. I do it almost daily. I even put them in a grilled cheese sometime. I just think that the flavor of arugula and spinach (especially arugula with that peppery flavor) is infinitely superior to iceberg.
But ultimately you are correct in that all are serviceable for a salad.
