High quality meat --> Medium Rare
Not as good quality --> Medium

Also depends on the cut i.e. you would cook a skirt steak more well than a filet.

I like my steak medium-rare to medium.  So, I always order medium because most good steak houses cook their meat a little on the rare side of the requested temperature.

MWC, I could not of said it better myself....but if it is me grilling it then I tend to cook a little bit more on the medium-rare side.
