I have to give credit where credits due...Betty Crocker, Asian Helper Chicken Fried Rice. Use rotesserie chicken and follow the instructions. I must admit, it is great.
Don't forget Apache's ginger sauce. recipe is here somewhere or I'll bump it.

I have had more then my share of rotisserie chickens, but not anymore. Those things are sodium bombs. I know they are easy, but so is roasting a couple of bone in-skin on chicken breasts, peeling the skin back, and adding a touch of olive oil along with salt and pepper before replacing the skin to roast. The skin keeps the meat moist.....just toss it when you pull the meat off the bone. Keeping it on the bone is not only cheaper, it gives the chicken more flavor and keeps it more tender.
