Pretty easy and little fancier than mac and cheese.....
2 1/2 pounds Yukon potatoes
3 cups of Heavy Cream
2 cups Gruyere Cheese (about 6-8 ounces shredded)
Peel and slice the potatoes real thin (1/8 inch) and simmer them in the cream, salt, white pepper (black pepper is fine here) for about 15 minutes until potatoes becoming soft.
Transfer into a baking dish. Liquid should come just to the tops of potatoes. Cover with the cheese and bake 35-40 minutes on 350 degrees.
Can throw some butter in there, maybe some tarragon or thyme.
