Best Meat for Burgers

Which Meat do you guys think is the Best for making
 
Hamburgers? 
 
I tried the Sirlion Hamburger before, It was pretty good...
 
I want to try the Kobe Burger ( $777 ).. They are kind of Pricey..
 
There are some others that I want to try like Ostrich , Buffalo , 
 
and Lamb

buffalo is noticeably good if done right
 
buy a beef tenderloin, trim the silver skin and most of the fat, cut  a few fat choice center filets, grind the rest into burger
 
beef, its what for dinner

Short Rib has a nice beef flavor.  Kind of fatty so mix it with something lean.  Will overpower most nice expensive cuts of meat so brisket is popular to mix it with because it is cheap.

Sirloin is of course good but I ground up a round steak the other day and that came out tasty.  Cheap too.

ground turkey, obviously pre-mixed before put into patties..... (onions, grated cheddar, diced jalapenos, bbq sauce)

Try an 70-30 mix of Sirloin to sausage.     A hot/spicy ground pan sausage does wonders for a burger.
