Yes you do get acclimated to the heat and humidity. Getting acclimated to the climate doesn't mean it will have no effect on those who are better acclimated to the climate, it simply means it will effect them to a lesser degree than it will someone who is not acclimate to it.
Moreover, your stats are completely meaningless without knowing who played who in those games. The heat becomes a factor when a team from a non-humid climate is forced to play in a very hot and humid climate. A team like the New York Jets playing in Miami does not qualify because the entire eastern seaboard is a humid climate.
There are only two college games in week 1 off the top of my head that qualify: BYU @ Ole Miss and Utah State @ Auburn. That being said, it will be difficult to guage how the much the weather will be a factor at this time because we don't know what the weather will be that day. It may rain. There may be a front come in from the north. There are a variety of weather patterns that could minimize the weather factor. If, however, it is a normal blistering hot and humid day, the weather absolutely will have an adverse effect on the performance of the players who hail from a non-humid climate.
The weather factor was on full display on national tv on September 3rd, 2005 when Boise played Georgia between the Hedges. At halftime many Boise players had to take IVs including starting QB Jared Zabransky who did not return to play the 2nd half. That's typical of what happens to players from teams that travel from non-humid climates.
If you like BYU in this game, I would hold off placing the bet until you have a better idea what the weather conditions will be that day. BYU will catch a little bit of a break because that is an afternoon game rather than a morning game like Utah State @ Auburn game.

after starting 2-5 last year the mormons ran up their record against gauntlet
of UNLV, Colo St, Wyoming, NM, UTEP
...SU road wins against decent teams over last 3 yrs not many, maybe semi away win against OU after Bradford went down and one against AF (who they owned over the years)...yes could win game not much in track record or recent play to merit laying pts on road and that's before foreign weather and surface

I just can't see backing Ole Miss until the can prove to stop someone on defense.
Other than Tulane, who did they stop last year? Only 4 starters return....3 FR and 1 Soph on the depth chart signals No depth.
This years team might be better at QB with Mackey but I need to see some defense because humidity can't tackle.

No question Ole Miss is suspect on defense.
I don't have a strong opinion on this game, but I would lean slightly to Ole Miss because of the home heat & humidity factor..

Now QB Mackey sitting this one out.
