I've gone the last 2 years. Last year I went to viewing parties at both Planet Hollywood and Treasure Island.
Planet Hollywood was GREAT, it was $50 to get in, but they had all the games on huge screens and the $50 included all you can drink beer and all you can eat food. Some other places like the Cosmopolitan were a little more expensive $100ish but was all you can drink everything (top shelf...) More importantly they had 2 satellite betting stations so it never took more than 3 minutes to place a bet (this comes in real handy at halftime).
The viewing party as Treasure Island was nice because they had it in their auditorium, it was free to get in and they had beer/food specials, plenty of cool stadium seating and satellite betting stations.
My best advice is choose a place that has satellite betting stations, these allow you to make plays quickly and are really helpful for halftime lines. Unless you are a person who makes all your plays the night before and just watches, you'll need a place to make a quick bet and the sportsbooks are not good for that. I'll be out there Tuesday-Tuesday opening week again this year. Have fun!

Surprised no one ever mentions Mirage. That's my fave anyway.
Or if you're not talking conventional sportsbooks, Lagasse's Stadium at the Palazzo can't be beat.
