it is tough to find a room this late in the game. most hotels will make you stay 3 day min and are at max rates. you might want to look 30-40 minutes out of the metro for a room, such as southern indiana, shelbyville, ky etc
oaks is considered the "locals" day but is almost as crowded as the derby. oaks had 112K in attendance last year.
louisville has plenty to do and is easy to get around with exception of the traffic nightmare around Churchill Downs.

the Sheraton is a good place, atleast from the stand point of being able to walk to the track and in being in a safe area. you are also a short cab ride down to 4th street where all the downtown bars and restaurants are.
you may also want to try going to the bars on bardstown road and baxter avenue in "the highlands" more of a local flavor there, 4th street is mostly tourist. this is also a short cab ride from the sheraton.
