I always go to the buffets in the late afternoon, right before the lunch buffet changes into the dinner buffet.  For example, the Bellagio Buffet changes over to dinner at 4pm.  If you get to the cashier at 3:59 or sooner, you pay the lunch price, but as soon as you get in it's dinner time, you get the dinner food.  Sure, don't cut it that close, try to get there at 3:45 or so. The line at the Bellagio Buffet is long, so I usually get in line at 3pm, anticipating a 45 minute wait.  However, the Spice Market Buffet at Planet Hollywood, rarely has a line and you can waltz in at 3:45.

The difference in pricing?  The lunch price on fridays at Bellagio is:  $19.95. the dinner price is $36.95.  So if you get there just before 4pm, you save $17.  Don't feel guilty, every smart eater is doing this, the casinos know this is done and don't say nothing.

Keep in mind that many buffets change up at different times, so get there a little early and research the changover time and look at the line.  Try to estimate getting at the cashier about 15 minutes before changover.  Harrah's and Flamingo are 3pm, Planet Hollywood is 3:30, Bellagio is 4pm.
