#8 Posted: 10/17/2012 6:12:20 PM Lots of butter, some melted cheese and you definitely can't forget the bacon bits! Chives are a nice touch too. Maybe just a shake of Tony Chachere's spice?

Wrapping a baked potato?
The goal is to dry out the inside so it's flaky. Poke holes and bake it on a bed of rock salt or rub it with coarse salt.

Poke 5-10 holes in one. Put in bowl and rub with canola oil. Sprinkle with kosher salt and bake DIRECTLY on the oven rack at 350 for 1 to 1.25 hours (depending on size of potato). Put a pan underneath to collect any drippings. Crispiest skin ever.  |
