So lets allow Denny's to offer shoddy health care insurance and have the EMPLOYEE pay for it through higher co-pays, ultra low maximums and awful coverage instead of the employer offer medical coverage that actually COVERS something.

That is exactly what I am saying. An employer can offer any form of acceptable insurance (any plan that is curently covered under HSA accounts is actually eligible at this point...some call those catastrophic plans). Or they can offer something better.
For example, our office has blue cross/blue shield. Some people have basic coverage some better. The key is that we (and Denny's) can require the employee to pay any part of the plan we want. i've heard of this free market concept before, maybe in a book. but i've never seen anything close to it in practice, i guess because i've lived in america my whole life where corporations get subsidies and welfare and loopholes and bailouts because they are too big to fail in some cases. tell me more about this free market that gets people upset when poor people get health insurance but when much more money is spent on corporations that are already making record profits, no one seems to blink an eye.
