You have to understand that cashout options are not a favor to the bettor. They do this strictly to protect their own liability and to hope that you as the bettor not only make poor decisions with it, but that you take your cashout and bet on something else.
Late in the game where the book has a good shot to beat you they’ll take it down knowing that you might not make another bet with it and that you have a good chance to lose anyway. If you have a good chance of winning they’ll offer you a lesser payout to take the money early before the game ends. The cashout option is there strictly to benefit the book and not the player.
