Chicken and Olives
Chicken pieces cooked in a slow cooker with stuffed olives, white wine and or chicken stock, garlic and tomato puree.
1.5 kg (3 lb) chicken pieces
salt and pepper
1 clove garlic, crushed
1 onion, chopped
2 bay leaves
½ cup white wine or chicken stock
3 tablespoons tomato puree
½ cup stuffed olives
Rinse chicken pieces and dry with paper towel. Lightly season with salt and pepper. Place in slow cooker.
Combine garlic, onions, bay leaf, wine or stock, tomato puree and olives, pour over chicken.
Cover and cook on Low for 5-8 hours.
