Quick meals in the slow cooker?

Any ideas? Want something I can prepare quick in the morning and be ready by dinner.

Prefer healthy (lean turkey or chicken)

i make a gringo version of tortilla soup with salsa, tomatos, onions cliantro and shredded chicken...

 the dollop of sour cream or sprinkle of cheddar and a few crushed tortilla chips is not healthy, but give it some extra...

Chicken and Olives

Chicken pieces cooked in a slow cooker with stuffed olives, white wine and or chicken stock, garlic and tomato puree.

1.5 kg (3 lb) chicken pieces
salt and pepper
1 clove garlic, crushed
1 onion, chopped
2 bay leaves
½ cup white wine or chicken stock
3 tablespoons tomato puree
½ cup stuffed olives

Rinse chicken pieces and dry with paper towel. Lightly season with salt and pepper. Place in slow cooker.

Combine garlic, onions, bay leaf, wine or stock, tomato puree and olives, pour over chicken.

Cover and cook on Low for 5-8 hours.

can do just about anything in a slow cooker.  Wife and I made short ribs yesterday slow cooked in a smoked porter with onions, carrots, and celery.

Have done pork roasts before, chili, chicken thighs, etc...

You name it you can make it.

Just google anything and I guarantee you will find it.

my fiancee has recently done turkey chili and pho in our slow cooker and both turned out amazing.  search for that has some good reviews and you wont be disappointed.
