I don't disagree with much of what you said except the "taking a big loss" comment.
The place paid $1800 for the bottle and ended up selling it for $2200. That's still $400 in profit. Sure it was $1550 off their typical sales price, but I doubt that a bottle like that is in such high demand that it cost them the opportunity to sell it to another customer that night.
As a last note, the server really should have said "Three thousand Seven Hundred Fifty" rather than just "3750." But they got their money, so no harm really done.

If the manager had projected say, 4 of those bottles to be sold a month at roughly 2k profit, that's $8,000 in sales. So they sold 5 instead for a total of $8,400. Still did not lose money.
In a business, profit is profit. Would you rather have 5 bottles on the shelf, or 4 of them and make $400 on the 5th one? Oversimplifying, but if you're so concerned, the next day you buy a replacement bottle for $1800, and pocket the $400 difference, you avoid media scrutiny, and show you were willing to work with a customer, rather than gouge them for a possible misunderstanding.
