I use the first one for things like green onions, carrots, peppers, celeray, etc. Stuff that doesn't tend to stick to the blade.
I use the 2nd one for potatoes....onions....stuff that tends to stick to your knife.
There are plenty of brands out there and I think most are solid. But I do think these are the two styles you should consider. Go to a store and give them a try so you can see how you feel and figure out what size will work best.
