The reason I suggested it is cause they really do read emails here at this place so I am skeptical about talking on email. Anyways she said she will think about it.

Just don't rush it. Come on man you can do it. Just talk to her. DON'T LET HER KNOW YOU ARE NERVOUS! Be calm and in control. Small talk...remember ask her questions. I told you this. If you ask the questions she has to answer and the less you have to talk. It will keep the attention on her an you can roll from there. Don't force it. Leave her wanting more.

Wait awhile before replying to her e-mails, gives the illusion you have better shit to do (which clearly you do not).
 
I would've strongly advised against the e-mail as intital contact but seeings that you already did, wait & ask her out to coffee in person.  Don't go straight for the dinner, coffee is an inexpensive way to get to know her.....
