Just don't drink too much. Something about the place makes one consume way too much in the way of alcoholic beverages.
Make sure you have a true NO poboy. Nothing else like it.

And I'll add a few things, having lived there and visited frequently.
Camilia Grille is worth a visit, although I haven't been to the new one in the Quarter.
Agree on the fancy expensive places. For the Quarter, Gumbo Shop, Acme Oyster, and Mulettes are great options and much cheaper.
Head uptown. Cooter Browns is a great sports bar, with a billion beers, and awesome boudin. Camilia Grille is up there.
Cats Meow, in the Quarter, is fun for happy hour (3 for 1 karaoke bar) and the Gold Mine is the late night spot around the corner.
Fat Harrys will be packed from 4 A.M. until 6 A.M.
Absolutely take the streetcar.
And check with bars in the quarter on balcony deals. Sometimes, you can all you can drink plus stay on the balcony deal for a decent price.

Can you recommend a hotel, one that's true authentic New Orleans style without loads of drunken kids and tourists?
Price doesn't matter.

Won't forget the name. Thanks d.
Give me a ring sometime and let me know how the transition is going.

Good recommendations in here. Though I imagine you're already bakc by now, I will second:
Cooter Browns (where the streetcar line hits the river)
The Columns (if you don't stay there, have a drink at the bar)
Lafites (I never understand why it's not more crowded, but at my ever-advancing age, a little quiet in the Quarter is just fine)
The Gumbo Shop (way under-rated, and practically next to Pat O'Briens).
Fat Harry's (haven't been there in years, but used to be my go-to bar uptown; had to step over a chalk outline of a body the first time I went there)
Not yet mentioned: Liuza's By the Track, the Parkway Bakery (which isn't a bakery), the Harbor, Jaques Imo. I really should just go live there.
