MMA newbie here....couple questions

Question

I see that Silva and Sarafin are the two heavy favorites tonight. Is there any way they lose? Are they that much head and shoulders better than their opponents?

What is the difference between MMA, UFC, etc and the other organizations? Is it like all the different titles in boxing, no real difference but just a different organization?

Ufc has the best fighters for the most part

I think in mma, compared to lots of pro sports, the underdog has a decent chance... Lucky punches. Poor judging. DQS like eye pokes, illegal strikes.
