Anybody run a coffee shop, cart or kiosk? Wondering about costs and any feedback.

this is true. you need a solid customer base to make profit. most people stay loyal if the coffee is good and the price is reasonable..

how do u compete with the established chains, people are very picky with their coffee and where they go

Have a niche like coffees for beginners.  The price can stay reasonable and it doesn't have to go below the competitors.  But, you must be good at marketing to those niche though.
